- In the same pot, sauté diced onion and minced garlic until fragrant.
- Add canned diced tomatoes, chicken broth, and balsamic vinegar to the pot. Stir well.
- Return the chicken to the pot and close the Instant Pot lid. Set the pressure cooking time to about 8-10 minutes on high pressure.
- Once the cooking time is complete, allow for a natural pressure release for 5-10 minutes, then manually release any remaining pressure.
- Carefully open the Instant Pot lid and remove the chicken. Shred or slice the chicken as desired.
- Serve the chicken cacciatore over cooked pasta or rice, and garnish with fresh basil or parsley.
Instant Pot Chicken Alfredo:

- Add chicken broth and scrape the bottom of the pot to release any browned bits.
- Place the chicken back into the pot, along with uncooked pasta and enough water or broth to cover the pasta.
- Close the Instant Pot lid and set the pressure cooking time to the recommended time for the type of pasta you are using (usually half of the package's cooking time minus 1-2 minutes).
- Once the cooking time is complete, perform a quick release of the pressure.
- Open the Instant Pot lid and stir in grated Parmesan cheese and a splash of cream or milk to create a creamy sauce.
- Allow the pasta to sit for a few minutes to thicken the sauce before serving.
