Ingredients:


  • 1 kg bone-in chicken, cut into pieces
  • 2 large onions, finely chopped
  • 4 cloves of garlic, minced
  • 2-inch piece of ginger, grated
  • 2 tomatoes, finely chopped
  • 1/2 cup plain yogurt, whisked
  • 1/2 cup heavy cream (optional)
  • 2 tablespoons ghee or vegetable oil
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon red chili powder (adjust according to your spice preference)
  • Salt to taste
  • Fresh cilantro leaves for garnish

Instructions:


  • Heat ghee or oil in a large, deep skillet or pot over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seeds. Sauté for a minute until they release their aroma.
  • Add the chopped onions to the skillet and cook until they turn golden brown, stirring occasionally. This will take about 8-10 minutes.
  • Add the minced garlic and grated ginger to the skillet. Sauté for another 1-2 minutes until the raw smell disappears.
  • Add the chopped tomatoes and cook until they soften and break down, forming a thick gravy. Stir in the ground coriander, turmeric, red chili powder, and salt. Cook for a few minutes to allow the spices to blend.
  • Reduce the heat to low and add the chicken pieces to the skillet. Stir well to coat the chicken with the spice mixture. Cover the skillet and let the chicken cook in its own juices for about 10 minutes.
  • Stir in the whisked yogurt and simmer the chicken in the yogurt sauce for another 10-15 minutes until the chicken is cooked through and tender. If desired, you can add the heavy cream at this stage to make the sauce richer and creamier.
  • Once the chicken is cooked, check the seasoning and adjust if needed.
  • Garnish with fresh cilantro leaves and serve the Chicken Korma hot with steamed rice, naan bread, or roti.
