Ingredients for Honey Sesame Chicken:


  • 1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons vegetable oil
  • 2 tablespoons sesame seeds
  • Salt and pepper to taste

Ingredients for Egg Fried Rice:


  • 3 cups cooked rice (preferably chilled overnight)
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 cup mixed vegetables (such as peas, carrots, and corn)
  • 2 tablespoons soy sauce
  • 2 eggs, lightly beaten
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions:


  • In a bowl, combine soy sauce, honey, sesame oil, rice vinegar, minced garlic, minced ginger, cornstarch, salt, and pepper. Whisk well to create a smooth marinade.
  • Add the chicken pieces to the marinade and toss until well coated. Let it marinate for at least 30 minutes.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set it aside.
  • In the same skillet, add sesame seeds and toast them until golden brown. Remove and set aside.
  • In the same skillet, add vegetable oil and heat over medium-high heat. Add minced garlic and chopped onion, and sauté until fragrant and translucent.
  • Add the mixed vegetables and stir-fry for 2-3 minutes until they are tender-crisp.
  • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  • Add the chilled cooked rice to the skillet and stir-fry everything together, breaking up any clumps of rice with a spatula.
  • Pour soy sauce over the rice and stir-fry for an additional 2-3 minutes until the rice is heated through and evenly coated with the sauce.
  • Add the cooked honey sesame chicken to the skillet and toss everything together to combine.
  • Remove from heat and garnish with toasted sesame seeds and chopped green onions.
