Creamy Garlic Parmesan Chicken with Spinach:


Ingredients:


  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup low-fat milk or unsweetened almond milk
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh baby spinach
  • 1 teaspoon dried thyme (optional)
  • Chopped fresh parsley for garnish

Instructions:


  • Season the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until they are golden brown on both sides and cooked through (about 4-5 minutes per side). Remove the chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  • Reduce the heat to medium and stir in the milk, grated Parmesan cheese, and dried thyme (if using). Let the mixture simmer gently for a few minutes until the cheese is melted and the sauce thickens slightly.
  • Add the fresh baby spinach to the skillet and let it wilt into the sauce.
  • Return the cooked chicken breasts to the skillet, spooning the creamy sauce over them. Simmer for an additional 2-3 minutes to heat the chicken through.
  • Taste the sauce and adjust the seasoning with more salt and pepper if needed.
  • Serve the creamy chicken over cooked whole wheat pasta, brown rice, or steamed vegetables. Garnish with chopped fresh parsley.
